Coconut Sorbet with Sweet Rhubarb – 5 Servings

Sorbet

1 1/4 cup of low fat coconut milk
½ cup coconut flakes
4 1/2 cups of ice

Place all ingredients into your blender and puree until smooth.

Rhubarb Topping

3 cups sliced fresh rhubarb
1/2 cup sugar or honey
1/4 cup water
1/8 teaspoon ground nutmeg *** (make sure nutmeg is bladder friendly for you.)
1/4 teaspoon vanilla extract

In a saucepan, combine all the ingredients and bring to a boil. Reduce the heat; simmer, uncovered, for 10 minutes, until the rhubarb is tender.
